The Sorc used to be hard to level, but with the advent of respecs, it's a short walk to level 30, either by way of Fireball or Charged Bolt. Later on, she beats Hell Andariel and Mephisto with her eyes closed, grabbing the fancy loot to overbuild every character you ever wanted.
The Necromancer starts slow, summoning his army of a few skeletons at a time, and by Hell he's still slow, he's gotta hoof it between target locations, utterly wrecking things with a high level CE and enjoying his ability to carry a heap of MF with few pitfalls, if driven safely.
I'm sure there's other "offenders" to be found, but these are the big two that seem to stick out in memory.
MFing and "___ runs" makes a big difference, both in sanity and your characters abilities to utterly steamroll the game and get bored; feel free to pass on these, while we're at it.
Sameness is easy. Rebuilding your favorite character is fun and you probably know every way around how to gear it up, exact breakpoints and requirements for success; not today, you're gonna roll that Boulder Druid you've always wanted and it's going to suck, and you're going to enjoy it.
Well, that's my rant. It's not a suggestion, it's just what I'm trying, what's working for me and keeping me from losing interest. Really awesome advice here. I can barely stick with either of the above builds past ACT 1 because they bore me enough to take up gardening.
So called 'weak' builds like a boulder druid or 'thorns' paladin are a good place to start. Another idea is what my clan called 'live off the land.' No merchants for purchasing anything. The only NPC's you talk to are the ones needed to advance or for quest awards. No muling or mfinding either... find a tasty Ist rune? Drop it or keep and use it. For further challenge, try to play in full 8 player games and go solo. Or try single player with the 'players 8' command and no ATMA.
Just restarted hardcore on USWest after a 1 + year absence and am starting with a solo bone/CE necro. Never played it before and am having a blast, especially 'living off the land'.|||Here's few restrictions\ideas I tried in single player within the past year:
-No potions, only replenish life, leach and natural mana regen. I have to admit I did cheat until I found my first angelic ring but after that I never sipped a potion. Got to lvl46 with the barb before it got electrocuted by beetle baileys in that specific lair.
-Magic and\or socketed items only. Lvl57 javazon got eletrocuted by souls.
-A boxer. Pick up a barb, get it to lvl30, remove weapon(s) and never use them again and just beat the crap out of your enemies with your berserking fist. Before that feel free to use weapons. Surprisingly this one got to lvl70 before RIP.

-No TPs allowed. This is somewhat lame, but it certainly makes it funny that if you want to go back to town you run to the closest WP. Beter plan what you stockpile besides charms.
-No hotkeys. This is pretty much a cluster**** but... well
